A color-changing gin sour. Pours deep indigo, blooms violet-pink when the lemon hits. Same liquid, new surround.

Ingredients

  • 2 oz Empress 1908 gin
  • 0.75 oz Lemon juice
  • 0.75 oz Honey syrup
  • 1 Egg white
  • Lemon wheel

Method

  1. Honey syrup first: 2 parts honey stirred into 1 part hot water.
  2. Dry shake gin, honey syrup, and egg white without ice, 15 seconds.
  3. Add ice, shake hard again, strain up into a coupe — deep indigo under white foam.
  4. For the show, pour the lemon slowly through the foam and watch it bloom violet-pink, then stir gently.
  5. For perfect texture, shake the lemon with everything instead.
  6. Lemon wheel on the rim.
